You won’t find any short­cuts in chef Makoto Tokuyama’s kitchen; he’s un­com­pro­mis­ing on qual­ity. Early morn­ing trips to the mar­kets mean he’s able to se­cure fresh gin­ger for pick­ling, wasabi root which is al­ways grated ta­ble-side, and im­pec­ca­ble seafood – the likes of which you won’t find else­where in the city.
