ALMOND HONEY-BAKED SALMON WITH POTATO CAULIFLOWE­R MASH

Potato cauliflowe­r mash

600g mashing potatoes, peeled and diced 2cm 1⁄ head cauliflowe­r, cut into

2 small florets 1 tablespoon butter 2-3 tablespoon­s milk

Almond honey-baked salmon

500g boneless salmon fillets (skin on) 1 tablespoon runny honey 1 teaspoon lemon juice 50g sliced almonds, very finely chopped

Preheat oven to 200 degrees Celsius. Line an oven tray with baking paper. Bring a medium pot of salted water to the boil.
