PLANT mint, roses (for har­vest­ing the hips), chamomile, lemon balm, echi­nacea, an­gel­ica, lemon­grass, ver­bena or dan­de­lion.

MAKE Fresh herb tea Use 1 sprig (or 1 Tbsp) fresh herbs per per­son and bruise by tear­ing or crush­ing leaves to re­lease their oils. In­fuse in hot wa­ter to your de­sired strength or use ‘de­coc­tion’ (boil herbs in wa­ter then strain). Al­ter­na­tively, dry your tea herbs (see right).
