Use crushed or bruised straw­ber­ries from your berryp­ick­ing ef­forts to make this maple berry cream. Whip 200ml cream, fold in 1-2 Tbsp pure maple syrup and around 1 cup crushed straw­ber­ries. Use to sand­wich to­gether sponge cakes, top a pavlova, spoon over fruit salad or add to a sun­dae.
