The light-bulb moment for Mash Tun Crackers came when cracker-maker James Chatterton contemplat­ed the mountains of spent grain left over from the beer-making business. “There was this huge edible resource going to waste.” He got into the kitchen and started to experiment. He and his then business partner Mike Cheyne, came up with a crunchy cracker that is 70% fibre and 30% protein with a heap of minerals and vitamins. The grain is bonded with olive oil and rice bran oils, plus quinoa and finished with poppy seeds and a shake of sea salt. The crackers are now sold through delis and specialist food shops throughout New Zealand. James say customers like the realness. “It’s true to the idea of the cracker.” The guys used to make them in a bakery at night, now they're made in a bakery close to the source of the grain at Tuatara Brewery. 96A Glasgow Street. 021 888 531, mashtun.co.nz
