Pick­ing herbs from the gar­den and us­ing them im­me­di­ately en­sures a fresh taste and colour.

If there is no gar­den space avail­able, pots of herbs, grow­ing in­door or out­side, are fun to grow and great to have, es­pe­cially for quick-flick recipes. 1 Tbsp but­ter 4 small­ish spring onions, chopped 500g frozen baby peas 1 heaped Tbsp chopped mint 1 litre water 1 tsp each salt and su­gar.
