Roasted Vegetable Salad with Feta

SERVES 4 PREPARATIO­N 10 MINUTES

60g baby spinach leaves 60g baby rocket leaves 1½ cups Roasted Mixed

Vegetables (recipe left) 420g can chickpeas, rinsed 200g creamy feta,

crumbled ½ cup cashews, toasted

1/3 cup sliced green olives ½ cup coriander sprigs DRESSING 2 tablespoon­s olive oil 1 tablespoon lemon juice

1 tablespoon Dijon mustard

1. In a large bowl, combine spinach, rocket, veges, chickpeas, feta, cashews, olives and coriander.

2. DRESSING. In a jug, whisk oil, lemon juice and mustard.

3. Toss dressing through salad when ready to serve.
