Fish Tacos
SERVES 4 INGREDIENTS 11 PREP + COOKING TIME 24 mins
1 x 400g Sealord Fish Bites (lemon pepper crumb or classic crumb)
2 ripe avocados
¼ cup coriander leaves, chopped
1 spring onion, chopped
½ tsp chilli flakes
Dash of red Tabasco sauce
Juice of 1 lime
1 garlic clove, crushed
Salt
8 small flour tortillas
Red and green cabbage, thinly sliced
Salsa, to serve 1. Preheat oven to 200°C. 2. Place Sealord Fish Bites on tray. Cook for about 7 minutes each side or until fully cooked.
3. While the fish is cooking, peel avocados and place flesh in a mixing bowl. Add coriander, spring onion, chilli flakes, Tabasco, lime juice, garlic and salt. Mash together with a fork.
4. Wrap tortillas in foil and place in the oven for a few minutes. When fish is ready, place tortillas on a flat surface.
5. Place some of the cabbage on tortillas followed by guacamole. Top with fish bites. Serve with salsa.
