Chicken Tikka Masala with Bas­mati Rice

SERVES 1 PREP + COOK TIME 25 min­utes

2-3 tea­spoons canola oil 1 skin­less chicken breast,

thinly sliced 1 ta­ble­spoon tikka masala

spice paste 1 medium tomato, diced ¼ cup tomato purée 1 ta­ble­spoon le­mon juice ⅓ cup thick nat­u­ral yo­ghurt 1 UN­CLE BEN’S Bas­mati Rice Cup 2 ta­ble­spoons fresh co­rian­der

leaves 1. Heat oil in a pan, then add chicken and stir-fry for 2 min­utes. Add tikka masala paste and stir­fry for an­other minute.

2. Add diced tomato and purée, then sim­mer for 3-4 min­utes to cook chicken and re­duce sauce.

3. Stir in le­mon juice and yo­ghurt. Sim­mer gen­tly for an­other minute, while heat­ing the rice cup for 40 sec­onds in a mi­crowave, ac­cord­ing to packet in­struc­tions.

4. Place rice in a bowl and use a fork to fluff it up. Spoon chicken into the bowl and serve scat­tered with co­rian­der.
