Chicken Tikka Masala with Basmati Rice
SERVES 1 PREP + COOK TIME 25 minutes
2-3 teaspoons canola oil 1 skinless chicken breast,
thinly sliced 1 tablespoon tikka masala
spice paste 1 medium tomato, diced ¼ cup tomato purée 1 tablespoon lemon juice ⅓ cup thick natural yoghurt 1 UNCLE BEN’S Basmati Rice Cup 2 tablespoons fresh coriander
leaves 1. Heat oil in a pan, then add chicken and stir-fry for 2 minutes. Add tikka masala paste and stirfry for another minute.
2. Add diced tomato and purée, then simmer for 3-4 minutes to cook chicken and reduce sauce.
3. Stir in lemon juice and yoghurt. Simmer gently for another minute, while heating the rice cup for 40 seconds in a microwave, according to packet instructions.
4. Place rice in a bowl and use a fork to fluff it up. Spoon chicken into the bowl and serve scattered with coriander.
