Bud­dha Bowl

SERVES 1 PREP + COOK TIME 10 min­utes

1 UN­CLE BEN’S Brown Rice Cup hand­ful baby spinach leaves ½ cup pre­pared slaw

(avail­able from su­per­mar­kets) ½ cup cherry to­ma­toes, halved ½ avo­cado, sliced 2 tea­spoons sesame oil 1 ta­ble­spoon soy sauce 1 ta­ble­spoon le­mon juice 1 ta­ble­spoon raw al­monds or

wal­nuts, roughly chopped 1 tea­spoon each pump­kin,

sun­flower and sesame seeds

1. Mi­crowave the rice cup for 40 sec­onds, ac­cord­ing to packet in­struc­tions. Trans­fer rice to a bowl and toss with spinach leaves, to wilt.

2. To as­sem­ble the Bud­dha bowl, top rice with slaw, to­ma­toes and avo­cado.

3. Make dress­ing by com­bin­ing sesame oil, soy sauce and le­mon juice in a small bowl. Driz­zle dress­ing over the Bud­dha bowl, then sprin­kle with nuts and seeds.
