Honey, Soy & Chilli Chicken with Veg­etable Med­ley Rice

SERVES 1 PREP + COOK TIME 25 min­utes

2 tea­spoons honey 1 ta­ble­spoon light soy sauce 1 ta­ble­spoon sweet chilli sauce 2 tea­spoons ap­ple cider

vine­gar 1 gar­lic clove, crushed 2-3 ta­ble­spoons canola oil 1 skin­less chicken breast, cut

in 2cm cubes 1 UN­CLE BEN’S Veg­etable

Med­ley Rice Cup 1 spring onion, finely sliced 1 tea­spoon sesame seeds

1. In a small bowl, stir to­gether honey, soy, sweet chilli, vine­gar and gar­lic.

2. Heat oil in a pan over medium-high heat. Add cubed chicken and stir-fry for 2-3 min­utes un­til lightly browned. Add sauce mix­ture to chicken and sim­mer for 2-3 min­utes, stir­ring reg­u­larly un­til the sauce turns syrupy and chicken is cooked.

3. At the same time, mi­crowave the rice cup for 40 sec­onds, ac­cord­ing to packet in­struc­tions, then fluff up rice with a fork.

4. Serve chicken and rice in a bowl, scat­tered with spring onion and sesame seeds.
