Honey, Soy & Chilli Chicken with Vegetable Medley Rice
SERVES 1 PREP + COOK TIME 25 minutes
2 teaspoons honey 1 tablespoon light soy sauce 1 tablespoon sweet chilli sauce 2 teaspoons apple cider
vinegar 1 garlic clove, crushed 2-3 tablespoons canola oil 1 skinless chicken breast, cut
in 2cm cubes 1 UNCLE BEN’S Vegetable
Medley Rice Cup 1 spring onion, finely sliced 1 teaspoon sesame seeds
1. In a small bowl, stir together honey, soy, sweet chilli, vinegar and garlic.
2. Heat oil in a pan over medium-high heat. Add cubed chicken and stir-fry for 2-3 minutes until lightly browned. Add sauce mixture to chicken and simmer for 2-3 minutes, stirring regularly until the sauce turns syrupy and chicken is cooked.
3. At the same time, microwave the rice cup for 40 seconds, according to packet instructions, then fluff up rice with a fork.
4. Serve chicken and rice in a bowl, scattered with spring onion and sesame seeds.
