Pulse 2 cloves gar­lic, 1 Tbsp Di­jon mus­tard, 3 Tbsp lemon juice, 1 Tbsp su­gar and 1 tsp chilli flakes in a food pro­ces­sor to break down the gar­lic. Add large hand­ful each pars­ley (in­clud­ing stems), co­rian­der (in­clud­ing roots) and spinach then blitz to paste. With mo­tor run­ning, add 3 Tbsp white wine vine­gar then driz­zle in 1 cup rice bran oil. Sea­son with salt and pep­per to taste.
