+ Rocky road is a great gift as you can cus­tomise the in­gre­di­ents to suit your loved ones. All you need is some good-qual­ity choco­late to stick it all to­gether.

+ I cre­ated an old-school lolly mix for my hus­band (red and green jet planes, pink marsh­mal­lows and white choco­late but­tons) and for Mum I made a posh pineap­ple-lump mix with fancy dried pineap­ple, pis­ta­chios and white marsh­mal­lows.

+ Line the base and sides of a shal­low bak­ing tin with bak­ing pa­per.

+ Roughly chop your cho­sen in­gre­di­ents and place in a bowl. Break up choco­late and place in a heat­proof bowl over a pan of sim­mer­ing wa­ter (don’t let the bowl touch the wa­ter); stir oc­ca­sion­ally un­til melted. + Pour choco­late over in­gre­di­ents and stir to just coat. Tip mix­ture into the tin and press level (or use large sil­i­cone ice cube trays). Dec­o­rate the top with ex­tra nuts, choco­late but­tons or sprin­kles.

+ Place in the fridge to set then cut with a hot knife and store in an air­tight con­tainer in the fridge.
