+ Rocky road is a great gift as you can customise the ingredients to suit your loved ones. All you need is some good-quality chocolate to stick it all together.
+ I created an old-school lolly mix for my husband (red and green jet planes, pink marshmallows and white chocolate buttons) and for Mum I made a posh pineapple-lump mix with fancy dried pineapple, pistachios and white marshmallows.
+ Line the base and sides of a shallow baking tin with baking paper.
+ Roughly chop your chosen ingredients and place in a bowl. Break up chocolate and place in a heatproof bowl over a pan of simmering water (don’t let the bowl touch the water); stir occasionally until melted. + Pour chocolate over ingredients and stir to just coat. Tip mixture into the tin and press level (or use large silicone ice cube trays). Decorate the top with extra nuts, chocolate buttons or sprinkles.
+ Place in the fridge to set then cut with a hot knife and store in an airtight container in the fridge.
