On a hot sum­mer af­ter­noon, we like it as a tall drink with ice and soda, as sim­ple as pos­si­ble. Be­fore din­ner, though, we kind of pre­fer the cock­tail ver­sion, but light­ened up with a lit­tle splash of soda. Ei­ther way, the Tequila Daisy is an ex­cel­lent re­minder that even in the world of drinks; progress comes with its own costs. Why don’t you try this.

IN­GRE­DI­ENTS

• 2 oz. 100 per­cent agave Re­posado tequila •

3/4 oz. fresh-squeezed lime juice

• 1/2 oz. ar­ti­sanal/nat­u­ral grena­dine

• 1 oz. sparkling wa­ter Op­tional, but rec­om­mended:

• 1 dash ab­sinthe

DI­REC­TIONS

Shake the tequila, lime juice, and grena­dine well with ice.

Strain into 8 Oz high­ball glass full of cracked ice.

Top off with 1 Oz chilled sparkling wa­ter.

Stir briefly; gar­nish, if you like gar­nish­ing, with lime wheel; and add a straw.

If adding ab­sinthe, strain in­stead into a chilled cock­tail glass, adding only ½ Oz sparkling wa­ter.
