Two highly awarded Ital­ian chefs re­cently com­pleted an 11-day res­i­dency at Port Moresby’s Air­ways Ho­tels, where they pre­sented their dishes at the Deli KC del­i­catessen– bistro.

Al­berto An­narumma and El­nava de Rosa worked along­side lo­cal chefs dur­ing their visit.

Chef An­narumma has worked in Miche­lin­starred restau­rants around the globe, in­clud­ing the Ritz-Carl­ton in Hong Kong and Four Sea­sons in Paris.

He spe­cialises in pizza and pasta and the use of tra­di­tional Ital­ian in­gre­di­ents such as buf­falo moz­zarella, ri­cotta, toma­toes and lemons.

Chef de Rosa is a pas­try chef who has trained in Rome, Eng­land and France.

Mean­while, Air­ways Ho­tel has been named in a list of the world’s best ho­tels.

Huff­in­g­ton Post con­trib­u­tor, travel pi­o­neer and ‘ fa­ther’ of mod­ern ad­ven­ture travel, Richard Bangs, placed Air­ways fifth in the top 10 ho­tels he has ex­pe­ri­enced.

Bangs based his selections – posted on his blog – on cosi­ness, ser­vice and ‘in­ef­fa­ble qual­ity of heart’.

He says of Air­ways: “It is at once lux­u­ri­ous and whim­si­cal, with a DC-3 Dakota air­craft set into the side of the ho­tel, and lobby dec­o­ra­tions crafted from fuse­lages.

“The Vue restau­rant, near the in­fin­ity pool on the sev­enth floor, has been ren­o­vated and of­fers bril­liant food (and fresh co­conut water), with a de­lec­ta­ble view of the Owen Stan­ley Ranges, Boot­less Bay and the nearby in­ter­na­tional run­way.” ■
