I NGREDIENTS

2 eggs 5 tbsp. sugar 1/4 cup dark chocolate 1/4 cup but­ter 1/8 cup flour 1/4 cup fresh mint

PRO­CE­DURE

1. Pre­heat oven to 215°C. Us­ing a mixer, com­bine the eggs and sugar un­til it dou­bles

the vol­ume of the mix­ture. 2. Us­ing a dou­ble broiler or bain marie method, melt the chocolate and but­ter

to­gether with mint. 3. In a bowl, use a rub­ber spat­ula to fold the melted chocolate with the flour un­til

mix­ture be­comes thick. 4. Brush a small ramekin with

but­ter and flour. 5. Pour the coulant mix­ture into the ramekin and let it bake for 4-5 min­utes.

6. Af­ter bak­ing, care­fully re­move the coulant from the ramiken quickly and serve while hot. Pair it with vanilla

or pis­ta­chio ice cream.
