SNOW PEA SALAD
April Bloomfield has two Michelin star-restaurants. 1/2 c. EXTRA VIRGIN OLIVE
OIL 1/4 c. LEMON JUICE
3/4 t. SEA SALT 1 lb. SNOW PEAS, trimmed 1 big pinch MINT LEAVES, chopped
LEMON JUICE 1 handful ARUGULA Combine first 3 ingredients in a container with a tightfitting lid and shake well. Mix peas and mint in a large bowl. Add dressing, and toss. Season with salt and lemon juice. Add arugula, and toss
to coat. Serves 4.
