His­toric Ca­ma­lig Restau­rant on Sto. Rosario Street in An­ge­les, Pam­panga, has ev­ery right to be called so. Its 150-year-old build­ing has, through !ve gen­er­a­tions, trans­formed from a grain de­pot to a tool shed to an art cen­ter to the present-day restau­rant. In the 1980s, Ar­mando Ne­po­mu­ceno re­lo­cated his small pizze­ria, Ar­mando’s Pizza—a pi­o­neer­ing busi­ness launched in 1973—to the old ca­ma­lig (which means “shed” in Ka­pam­pan­gan). This is why Ca­ma­lig Restau­rant is also billed as “The Home of Ar­mando’s Pizza: Ang Pam­bansang Pizza.” The thin, crispy pizza of­fered by Ca­ma­lig Restau­rant in­no­vates the clas­sic Ital­ian pie with fresh, lo­cal and some­times un­usual top­pings. The pizza is driz­zled and slathered with a rich, thick, sweet sauce that has been slow-cooked for six hours. The dough is hand­made and baked to a crispy crust. Among the 18 "avors and vari­a­tions avail­able, the most pop­u­lar is the out­landish but de­light­ful Doy’s Ka­pam­pan­gan, with its un­usual, play­ful com­bi­na­tion of long­gan­isa, ebun buru, onions, and pickle rel­ish. In­ter­est­ing non-pizza of­fer­ings in­clude pasta, !sharon (fried tilapia skin), and sisig. At night, His­toric Ca­ma­lig Restau­rant me­ta­mor­phoses yet again. Un­der the stars, the restau­rant be­comes a hip han­gout for danc­ing with live per­for­mances on the out­door stage by the area’s !nest rock and retro acts.
