MULTI- GRAIN MAIZE TUILE
60 grams multi- grain maize cereal, chopped roughly
60 grams powdered sugar 60 grams all- purpose flour 60 grams egg whites 45 grams melted unsalted butter 2 grams salt
Using a medium-sized metal bowl, combine all ingredients except for the multi-grain maize. Using a whisk, mix until it turns into a smooth paste. Chill for at least 2 hours. Preheat oven to 165°C. Thinly spread cool mixture on a Silpat-lined flat baking tray. Sprinkle top with chopped multi-grain maize. Bake for 5 minutes until tuile is lightly browned. Cool down and crack into pieces.
