But since the be­gin­ning, we’ve had an un­con­ven­tional pref­er­ence, and that is by be­ing nat­u­ral and tra­di­tional.” It is for this rea­son that Mark An­tiqueno and chef Ke­siah Jacinto’s brand stands out among the pack. Some are pleased with wild boar be­cause it’s health­ier and more gamey, but oth­ers are skep­ti­cal about its black color. Those who dare to try it, though, end up happy con­verts.

The boar sausage comes in malung­gay, nutty, and smoked vari­ants.
