Drawing from a family recipe that uses santol to make membrillo, a Spanish paste usually made of quince and commonly paired with Manchego, Christian Valdes incorporated the flavors into chocolate, which was eventually added to CMV Txokolat’s (formerly CMBV Confectionaires Co.) Filipino-inspired line of truffle chocolates. For the santol variety, Valdes carefully combined all elements to produce a distinctive flavor enclosed in a copper lusterdusted chocolate shell inspired by the Laguna Copperplate Inscription discovered in 1989.
