CMV Tx­oko­lat’s san­tol choco­late

Draw­ing from a fam­ily recipe that uses san­tol to make mem­brillo, a Span­ish paste usu­ally made of quince and com­monly paired with Manchego, Chris­tian Valdes in­cor­po­rated the fla­vors into choco­late, which was even­tu­ally added to CMV Tx­oko­lat’s (for­merly CMBV Con­fec­tion­aires Co.) Filipino-in­spired line of truf­fle choco­lates. For the san­tol va­ri­ety, Valdes care­fully com­bined all el­e­ments to pro­duce a dis­tinc­tive fla­vor en­closed in a cop­per lus­ter­dusted choco­late shell in­spired by the La­guna Cop­per­plate In­scrip­tion dis­cov­ered in 1989.
