Fresh clams are per­fect with gin­ger, onions, and gar­lic for a sa­vory tinola. Bring the clams to a boil along with the other in­gre­di­ents un­til the shells open. If you pre­fer, add un­ripe pa­paya or win­ter melon and let it sim­mer for a few more min­utes. Sea­son with ground pep­per and patis, then serve.
