Order the cochinillo asado at least two days in advance. Pair this with any of the equally delicious, good-to-share paellas on the menu. Highly recommende­d is the Paella Montana, which teems with Portobello mushrooms, roasted garlic, asparagus, and truffle oil. Start with the refreshing insalata di Gorgonzola— the combinatio­n of apples, walnuts, and green apple vinaigrett­e gives a nice play of textures and flavours. Cap the meal off with the warm white chocolate bread pudding with a bourbon cream sauce, which strikes a wonderful sweet contrast to the savoury feast you just had.
