Shangri-La’s Bo­ra­cay Re­sort and Spa’s fine din­ing Ital­ian gem, this A-frame tree house nes­tles on a crown­ing peak of the sprawl­ing ver­dant prop­erty, of­fer­ing a quiet es­cape from the is­land’s bustling crowds. Rima’s menu might be lim­ited but the flavours jump off the plate with com­plex­ity and rich­ness. The Chef de Cui­sine Omar Ugo­letti ex­e­cutes flaw­lessly. This is a must din­ing des­ti­na­tion for even the pick­i­est gour­mand.

The ter­rine of foie gras with green ap­ple jelly and the pac­cheri with lamb ragout ad­mirably show­case the tal­ent in the kitchen. The chef’s seafood stew, a fam­ily recipe, is soul­fully sat­is­fy­ing. For those bring­ing an ap­petite, the four-course de­gus­ta­tion menu is fairly priced and the best way to ex­pe­ri­ence the chef’s note­wor­thy tal­ent. Best saved for that spe­cial oc­ca­sion with a spe­cial some­one.
