func­tions, Mirèio has a room for 10. The cosy rooftop ter­race can hold 70. Its in­te­ri­ors re­flect the ele­gance of its ori­gins. Floor to ceil­ing win­dows of­fer an un­ob­structed view of the Makati cityscape.

Com­mis­sioned art­works from Filipino artists hang on the walls, along with a modern paint­ing of the story of Mirèio by artist Mar­cel An­to­nio. The restau­rant’s logo, a re­cre­ation of Mis­tral’s hand­writ­ing, is a nod to the poem’s au­thor. Lead­ing the Mirèio culi­nary team is Chef Ni­co­las Ce­gretin, who grew up in Provence and gained ex­pe­ri­ence work­ing for no­table es­tab­lish­ments across Europe. He started his ca­reer in Paris with Miche­lin-star restau­rants Lasserre and Api­cius, both recog­nised for French gas­tro­nomic cui­sine. He also worked in sev­eral pres­ti­gious 5-star ho­tels and at Ho­tel La Mamou­nia in Mar­rakech.

Ce­gretin’s menu evokes a sense of nos­tal­gia. It is a fu­sion of his own home-cook­ing and more con­tem­po­rary flavours. In his own words, he de­scribes his dishes as “el­e­gant in a sim­ple way, so that the flavours of our in­gre­di­ents are the high­light.”

On the menu are sig­na­ture tartares such as Beef Tartare with Goat Cheese and Basil, Fresh and Smoked Salmon Tartare with Granny Smith Ap­ple and Di­jon Mus­tard Cream, and Veal with King Prawns Tartare and Crispy Rice. Savoury dishes such as Grilled Butcher’s Choice Beef with Sautéed Pota­toes and Black Pep­per Sauce, Slow-cooked Ox­tail Par­men­tier with Black Truf­fle Jus and Mesclun, and Pan-seared Herb Crusted Sea Bass and Rata­touille Stuffed Can­nel­loni with Gin­ger and Olive Oil are set up to be din­ner favourites. Desserts with a twist such as Laven­der Crème Brûlée, Lemon Madeleine and Roasted Com­pote Provençale, and Ap­ple Tart Tatin with Vanilla Ice Cream are avail­able to cap each meal. To com­ple­ment the dishes, Mirèio also has an ex­ten­sive se­lec­tion of French and New World wines.
