Pre­heat oven to 400°F. Grease 4 (4-inch) fluted pie pans or ma­mon molds with un­salted but­ter. Whisk to­gether ¾ cup rice flour, ½ cup all-pur­pose flour, ¼ cup sugar, 2 tea­spoons bak­ing pow­der, and ¼ tea­spoon salt in a large bowl un­til com­bined; make a well in the cen­ter. Whisk to­gether 2 large eggs, ½ cup co­conut cream, and ½ tea­spoon ube fla­vor­ing in an­other bowl; pour into the well and stir un­til just com­bined. Di­vide bat­ter among pans. Evenly di­vide ½ cup grated ched­dar cheese on top of bibingka. Bake in pre­heated oven for 15 to 20 min­utes, or un­til a tooth­pick in­serted in the cen­ter of a piece comes out clean. Serve warm. Makes 4.
