Preheat oven to 400°F. Grease 4 (4-inch) fluted pie pans or mamon molds with unsalted butter. Whisk together ¾ cup rice flour, ½ cup all-purpose flour, ¼ cup sugar, 2 teaspoons baking powder, and ¼ teaspoon salt in a large bowl until combined; make a well in the center. Whisk together 2 large eggs, ½ cup coconut cream, and ½ teaspoon ube flavoring in another bowl; pour into the well and stir until just combined. Divide batter among pans. Evenly divide ½ cup grated cheddar cheese on top of bibingka. Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted in the center of a piece comes out clean. Serve warm. Makes 4.
