Three-layer Choco­late Cookie Caramel Dip

Make the choco­late cookie layer: Place ½ cup cream cheese (at room tem­per­a­ture), ¼ cup un­salted but­ter (at room tem­per­a­ture), 1 tea­spoon vanilla ex­tract, ¼ tea­spoon salt, 2 ta­ble­spoons brown sugar, and ¼ cup semisweet choco­late chips in a bowl; beat with a wooden spoon or a hand­held mixer on medium speed un­til light and fluffy. Make the ganache layer: Place ½ cup semisweet choco­late chips in a medium heat­proof bowl; set aside. Heat ½ cup heavy whip­ping cream and 1 ta­ble­spoon light corn syrup in a pan over medium-low heat un­til just about to boil. Pour cream mix­ture over choco­late chips and mix un­til smooth. Cool for 15 to 20 min­utes. Place choco­late-cookie layer in a medium glass serv­ing bowl; smoothen top. Top with even lay­ers of ½ cup store-bought dulce de leche and ganache. Serve with cook­ies or pret­zels.
