Three-layer Chocolate Cookie Caramel Dip
Make the chocolate cookie layer: Place ½ cup cream cheese (at room temperature), ¼ cup unsalted butter (at room temperature), 1 teaspoon vanilla extract, ¼ teaspoon salt, 2 tablespoons brown sugar, and ¼ cup semisweet chocolate chips in a bowl; beat with a wooden spoon or a handheld mixer on medium speed until light and fluffy. Make the ganache layer: Place ½ cup semisweet chocolate chips in a medium heatproof bowl; set aside. Heat ½ cup heavy whipping cream and 1 tablespoon light corn syrup in a pan over medium-low heat until just about to boil. Pour cream mixture over chocolate chips and mix until smooth. Cool for 15 to 20 minutes. Place chocolate-cookie layer in a medium glass serving bowl; smoothen top. Top with even layers of ½ cup store-bought dulce de leche and ganache. Serve with cookies or pretzels.
