Cooked mush­rooms can be a real treat, es­pe­cially if they’re beau­ti­fully browned with just a hint of crisp­ness; but if you’re not care­ful, that pan of de­li­cious ’shrooms will turn into a sloppy, soggy mess be­fore your very eyes. The trick to crispy mush­rooms is mak­ing sure not to over­crowd the pan as you fry them. Over­crowd­ing the pan will only cre­ate steam and will pre­vent the mush­rooms from dry­ing out enough to de­velop a de­li­cious brown crust. Cook them in batches if needed.
