Joey de Lar­raz­a­bal-blanco’s Quick Pork Stir-fry

Serves 4 Prep Time 10 min­utes, plus marinating time Cook­ing Time 15 min­utes

✔ 500 grams pork steak, sliced into thin strips, or thinly sliced (yakinikustyle) pork ✔ 2½ ta­ble­spoons soy sauce ✔ 1 ta­ble­spoon oys­ter sauce ✔ 1½ ta­ble­spoons ke­cap

ma­nis (sweet soy sauce) ✔ 1 tea­spoon sesame oil ✔ canola or any mild­fla­vored veg­etable oil, to sauté ✔ 1 red onion, cut into

thin wedges ✔ 3 to 4 cloves gar­lic,

sliced thinly ✔ 10 grams gin­ger,

peeled and sliced ✔ 150 grams fresh baby

corn, sliced di­ag­o­nally ✔ 1 cup frozen peas ✔ 3 to 4 green

onions, sliced ✔ 3 to 4 sprigs cilantro,

leaves picked

1 Place pork, soy sauce, oys­ter sauce, ke­cap ma­nis, and sesame oil in a large bowl. Mix thor­oughly un­til pork is cov­ered in sauce. Mar­i­nate in the re­frig­er­a­tor for 30 min­utes. 2 Heat oil in a wok over medium-high heat. Sauté onions un­til they start to soften. Add gar­lic and gin­ger; sauté un­til fra­grant. 3 Add baby corn and sauté, toss­ing a cou­ple of times, un­til ten­der. Add peas and cook un­til ten­der, about 5 min­utes. 4 Re­move veg­eta­bles from the pan and set aside. Add an­other swirl of oil and, when hot, add pork. Sauté un­til just cooked, about 4 to 5 min­utes. Do not overcook the pork or it will be­come tough. 5 Add veg­eta­bles back to the pan and toss. Trans­fer to a plate and gar­nish with green onions and cilantro.
