I make a grilled eggplant salad. It only takes five to 10 minutes to grill fresh eggplant over an open flame, and you can prep your other ingredients like red onions, garlic, and tomatoes in the same amount of time.

Shrimp is a great way to feed the family in no time.

It only takes a few minutes to cook and it is super delicious. What I like to do is brown some garlic in butter before tossing in peeled and cleaned shrimp. Best quick ulam ever!

For the kids, I cook up baguette pizzas!

Slice a small loaf of French bread in half then top with tomato sauce, cheese, ham, and bell peppers. Toast in the toaster oven until the cheese melts. Quick, easy, and tasty.

—Trina Lyn Cortez I love a quick tokwa’t baboy seasoned with oyster sauce. I use leftover liempo to make it in a jiffy, and tokwa only takes a few minutes to fry until crispy. Just add some oyster sauce and a squeeze of calamansi.
