OK so you've heard about West In­dian Hot Sauce and the leg­endary fire of the Scotch bon­net pep­per which is its main in­gre­di­ent, but don't be afraid to try it out even if you are a bit ten­ta­tive at first. If you like the heat, try one of Saint Lu­cia's very own Baron Sauces as a dip for some lo­cal ac­cras or fishcakes. The crispy, light tex­ture and savoury salt­fish flavour are per­fect to high­light the unique, spicy, pi­quant flavour of the is­land's best loved condi­ment, but if you re­ally want to tone down the Scov­illes, mix one third Clas­sic Pep­per Sauce with two thirds Baron Ba­nana Ketchup for a real Lu­cian twist with your fries. Also great in Bloody Marys, but that's for another Nib­bles!
