OK so you've heard about West Indian Hot Sauce and the legendary fire of the Scotch bonnet pepper which is its main ingredient, but don't be afraid to try it out even if you are a bit tentative at first. If you like the heat, try one of Saint Lucia's very own Baron Sauces as a dip for some local accras or fishcakes. The crispy, light texture and savoury saltfish flavour are perfect to highlight the unique, spicy, piquant flavour of the island's best loved condiment, but if you really want to tone down the Scovilles, mix one third Classic Pepper Sauce with two thirds Baron Banana Ketchup for a real Lucian twist with your fries. Also great in Bloody Marys, but that's for another Nibbles!
