HOW LONG HAVE YOU WORKED IN TOURISM AND WHAT DO YOU LIKE ABOUT IT?

I started wait­ress­ing eight years ago, when the orig­i­nal Big Chef, Peter Kouly was the owner of the restau­rant. When Rosie & Marc Joinville took over six years ago I stayed on with them. I love to meet new peo­ple and get to know about their cul­ture, and the tourism in­dus­try lets me do that.

WHERE DO YOU DINE OUT FOR A SPE­CIAL OC­CA­SION?

Well, me and my guy like to go out for din­ner and we've been to lots of lovely places like Cap Mai­son, Bay Gar­dens and The Coal Pot, all of which we en­joyed. But be­ing in the business I'm a critic so I still rate Big Chef at the top, and I haven't found a bet­ter restau­rant. < laughs>

WHAT'S YOUR FAVOURITE SAINT LU­CIAN FOOD?

WHEN YOU GET A DAY OFF, HOW DO YOU EN­JOY THE IS­LAND?

I have to ad­mit I love my sleep! Work­ing six nights a week can be tir­ing, so on my day off I re­lax at home, or if it's a Sun­day I cook a big lunch for my fam­ily, then we head to the beach for a swim, usu­ally at Pi­geon Is­land. Oh wow, I love my Lu­cian lunch on a Sun­day - mac­a­roni and cheese, rice and red (kid­ney) beans, home made coleslaw and all the rest. In fact, that's why I do the cook­ing when I can!

WHERE DO YOU REC­OM­MEND FOR A GOOD LO­CAL LUNCH?

There are some good places in Rod­ney Bay, and the food court at JQ Mall usu­ally has dif­fer­ent spe­cials ev­ery day, so give them a try. But of course if it's a big night out, re­mem­ber Ta­pas on the Bay and Big Chef!
