Delir­ius’ Alva Pre­ville is the Most Cre­ative Bar­tender in the Caribbean fol­low­ing the Caribbean Ho­tels As­so­ci­a­tion Taste of the Caribbean Culi­nary Com­pe­ti­tion in July, when his St. Lu­cian Spice Tea was among three con­coc­tions he cre­ated purely for the event. Like the nutty pro­fes­sor of mixol­ogy, Alva dreams up cock­tails and sets about ex­per­i­ment­ing with in­gre­di­ents, pre­cise mea­sure­ments and crazy gad­gets, tak­ing the craft of mix­ing drinks to a whole new level.

St. Lu­cian Spice Tea con­tains among other things, lo­cal Chair­man’s Spice Rum, home­made aro­matic teas and a whiff of mango wood smoke, rounded off with a large ice ball con­ceal­ing fresh rose­mary. The prepa­ra­tion is as fas­ci­nat­ing as the drink is de­li­cious, so next time you’re in Delir­ius make sure to have Alva knock one up for you!
