The bold con­cept over­haul by Spa Esprit in part­ner­ship with con­sul­tant chef Diego Jac­quet fills a much-needed gap in the mar­ket; gluten-in­tol­er­ant din­ers can en­joy com­fort food like Ca­puto-flour Fo­cac­cia ($9) and Cod a la Plan­cha on Seaweed and Buck­wheat Risotto ($32) with peace of mind.
