Corpse Re­viver No. Blue 25ml Citadelle gin 25ml Man­cino Bianco Am­brato Ver­mouth 25ml Bols Blue 25ml fresh lemon juice 2 dashes St Ge­orge Ab­sinthe Luxardo cherry, for gar­nish

• Place all in­gre­di­ents ex­cept gar­nish, with ab­sinthe last, into a shaker tin. Fill with ice and shake till chilled through.

• Strain con­tents and pour into a chilled coupe glass. Gar­nish by drop­ping a spe­cialty cock­tail in­gre­di­ent, Luxardo cherry into the mid­dle.

Not a Hal­loween thing Fish, mol­luscs and other sea crea­tures are time-hon­oured matches with cit­rus, and this grown-up twist of the Corpse Re­viver No. 2 has plenty of cit­russy zest both from the choice of Citadelle gin and Bols bit­ter­sweet or­ange, com­ple­mented by freshly squeezed juice. Jane likens this stiff cock­tail to a martini, but with a tang and length that makes it food-friendly as well.
