Sum­mer Pav­il­ion of The Ritz-carl­ton, Mil­lenia Sin­ga­pore has re­tained its one Miche­lin star for the third year in a row, but the chef cred­ited for this ac­co­lade is not rest­ing on his lau­rels. Chi­nese ex­ec­u­tive chef Cheung Siu Kong has fol­lowed up with a six­course tast­ing menu ($168) that fea­tures well-ex­e­cuted delecta­bles, such as Smoked Duck with Crispy Bean­curd Skin and Gar­den Greens, and Sautéed Diced Miyazaki Wagyu Beef with Bit­ter Gourd in Black Bean Sauce.
