The name Basque Kitchen by Ai­tor of­fers an in­kling of what Un­listed Col­lec­tion’s lat­est con­cept has to of­fer. Head chef Ai­tor Jeron­imo Orive (for­merly head chef of one Miche­lin-starred Iggy’s) show­cases his fam­ily’s Basque Coun­try tra­di­tions along with group wine and bev­er­age man­ager Amir So­lay’s in­trigu­ing se­lec­tion of Span­ish wines, gins, pacharáns (sloe-flavoured liqueur) and Basque ciders. Try the gyudon-in­spired Ox­tail “Bomba” Rice, where Span­ish bomba rice grains are braised with An­gus ox­tail, and the Tx­uleta. The lat­ter is an An­gus prime rib that’s been grilled to a charred black, leav­ing rare, suc­cu­lent sliv­ers of beef within.
