The Japanese don’t have the monopoly on edible raw fish. The Latin Americans also lay claim to that with their ceviche. This dish, which originated in Peru, is a specialty of TONO Cevicheria, whose team of
Lima-trained chefs whips up authentic Latin American cuisine. TONO’s ceviches are made-to-order from sustainable seafood and “Tiger’s Milk”—a citrus-based marinade of lime and chillies. Not sure where to start? Go for the Ceviche Clasico, which is the catch of the day, criolla (best-described as South American salsa), sweet potato, canchita (toasted corn), lettuce and Tiger’s Milk. But before you assume that this restaurant serves only ceviche… WRONG. There’s other Peruvian fare like causas (a medley of whipped potatoes), ají pepper, limes and other flavourful toppings, and Lomo Saltado—stir-fried beef with onions, tomatoes and potatoes. Once that’s sorted, order a Pico Sour, sit back and soak
in the vibrant atmosphere.
TONO Cevicheria is located at #01-49/50 DUO Galleria, 7 Fraser Street. On weekdays, it opens from noon to 2:30pm for lunch and from 6pm to 10pm for dinner; on Saturday, it only opens
from 6pm to 10pm for dinner. Closed on Sunday.
