Re­fresh­ing your nat­u­ral yeast starter for your next bake

Do note that you will need to re­fresh your nat­u­ral yeast starter about 6 hours in ad­vanced be­fore you can use it for your bake. For ex­am­ple, you re­quire 250g of nat­u­ral yeast starter for your recipe. Start with 50% of nat­u­ral yeast starter to your flour weight. If the amount of flour you need is 500g, you will need 250g of nat­u­ral yeast starter. To ac­ti­vate 250g of nat­u­ral yeast starter for your bake, you will have to fol­low these steps:

1 Re­trieve 25g out of the 100g of ac­tive nat­u­ral yeast starter that you have al­ready pre­pared pre­vi­ously. 2 Add 125g of bread flour and 125g of wa­ter to the 25g of nat­u­ral yeast starter. Com­bine these three in­gre­di­ents in a clean con­tainer and mix well. 3 Set aside at room tem­per­a­ture for 5-6 hrs to al­low the starter to build up, there­after, it should be ready to use. The ready starter should be fluffy, bub­bly and would also have in­creased in vol­ume.
