Refreshing your natural yeast starter for your next bake
Do note that you will need to refresh your natural yeast starter about 6 hours in advanced before you can use it for your bake. For example, you require 250g of natural yeast starter for your recipe. Start with 50% of natural yeast starter to your flour weight. If the amount of flour you need is 500g, you will need 250g of natural yeast starter. To activate 250g of natural yeast starter for your bake, you will have to follow these steps:
1 Retrieve 25g out of the 100g of active natural yeast starter that you have already prepared previously. 2 Add 125g of bread flour and 125g of water to the 25g of natural yeast starter. Combine these three ingredients in a clean container and mix well. 3 Set aside at room temperature for 5-6 hrs to allow the starter to build up, thereafter, it should be ready to use. The ready starter should be fluffy, bubbly and would also have increased in volume.
