Maintaining your Natural Yeast
If you do not intent to do any baking with your active natural yeast, you will still need to feed it to ensure that the starter stays active. For this process, it will be good if you can feed your starter once every 3-4 days. This will ensure the natural yeast has ‘food’ to stay active.
For example, you have 300g of active natural yeast starter. Pour away 150g, then add 75g of bread flour and 75g of water. Stir the mixture well and allow it to sit at room temperature for about 1-2 hrs before placing the mixture into the refrigerator.
Make sure to repeat the process again 3-4 days later. This will help to keep your starter healthy and ensure that it is readyto-use when you need it.
