Main­tain­ing your Nat­u­ral Yeast

If you do not in­tent to do any bak­ing with your ac­tive nat­u­ral yeast, you will still need to feed it to en­sure that the starter stays ac­tive. For this process, it will be good if you can feed your starter once ev­ery 3-4 days. This will en­sure the nat­u­ral yeast has ‘food’ to stay ac­tive.

For ex­am­ple, you have 300g of ac­tive nat­u­ral yeast starter. Pour away 150g, then add 75g of bread flour and 75g of wa­ter. Stir the mix­ture well and al­low it to sit at room tem­per­a­ture for about 1-2 hrs be­fore plac­ing the mix­ture into the re­frig­er­a­tor.

Make sure to re­peat the process again 3-4 days later. This will help to keep your starter healthy and en­sure that it is readyto-use when you need it.
