SAVOURY RED RICE AND TOASTED SESAME SEED LOAF

480g bread flour 20g atta flour 250g natural yeast (fruit enzyme) 10g salt 300g + 25g water 150g fried savoury red rice* 30g toasted black sesame seed
*Prepare the fried savoury red rice. Cook the red rice according to packet instructions, then allow it too cool. Heat some olive oil in a small pan over mediumhigh heat then pan-fry chopped garlic and white onion until fragrant. Add the cooked red rice into the small pan and toss until the rice is well combined with the garlic and onion. Season with pinch of salt and a dash of black pepper.
