SAVOURY RED RICE AND TOASTED SESAME SEED LOAF

480g bread flour 20g atta flour 250g nat­u­ral yeast (fruit en­zyme) 10g salt 300g + 25g wa­ter 150g fried savoury red rice* 30g toasted black sesame seed

*Pre­pare the fried savoury red rice. Cook the red rice ac­cord­ing to packet instructions, then al­low it too cool. Heat some olive oil in a small pan over medi­umhigh heat then pan-fry chopped gar­lic and white onion un­til fra­grant. Add the cooked red rice into the small pan and toss un­til the rice is well com­bined with the gar­lic and onion. Sea­son with pinch of salt and a dash of black pep­per.
