On 27th January, a group of F&B industry professionals gathered at Guksu Restaurant at Suntec City Convention Mall for a fun and engaging Kimchi Masterclass organised by e2i together with H Group Holdings Pte Ltd. The masterclass, which was conducted by Professor Kim Jung-soo from Dae-duk University, gave participants the opportunity to discover the many benefits of kimchi, and how it can enhance the flavour of food. The afternoon got off to a good start with professor Kim explaining the benefits of kimchi, such as why kimchi is considered one of the top 5 world’s healthiest foods, thereafter, the executive chef of Guksu Restaurant – Choi Ming Chul – demonstrated to the crowd how kimchi is made. Apart from the live demonstration, chef Choi also shared with attendees the various ingredients used in making kimchi. The duo then proceeded to guide the participants through the tasting of several variations of kimchi. Another highlight from the session included the pairing of kimchi with other types of international cuisines such as Italian, Mexican, Indonesian, Japanese and Vietnamese. After the masterclass concluded in the evening, many of the participants stayed on to mingle and chat over delicious food, as both professor Kim and chef Choi guided attendees through a tasting of Korean traditional alcohol together with some traditional Korean dishes.
