Intercontinental Singapore’s sprawling Ash & Elm European dining restaurant featuring three exciting culinary theatres – a charcuterie and cheese room, wood-fired oven and an opengrill kitchen, has recently unveiled its new Sunday champagne brunch offering a tantalising feast of brunch classics, premium seafood, fresh bakes and sweet. Diners can start off with a selection of cured meats and cheeses paired fine wines, bubbles or fresh juices, before making their way to the seafood corner, where they can feast on fresh ocean catch like Boston lobsters, freshly-shucked oysters, poached live prawns and Alaskan king crabs. The buffet line also offers two freshly fired selections from the carving station with specials such as the slow baked Norwegian salmon fillet.
Signature seafood and meats items such as the chargrilled iberico pork loin, chicken duxelle roulade, baked cod fish with fennel confit and saffron sauce, confit duck leg with mashed potato, and Boston lobster risotto with diced asparagus, are also available upon request. These dishes are prepare a la minute, and are served in smaller portions.
Desserts, too, are equally impressive. Some of our favourites from the extensive dessert station include the chocolate hazelnut mousse with hazelnut feuilletine, mixed berries cheese cake, baked pistachio cherry crumble, cherry bread and butter pudding, and the crispy banana strudel.
