In­tercon­ti­nen­tal Sin­ga­pore’s sprawl­ing Ash & Elm Euro­pean din­ing restau­rant fea­tur­ing three ex­cit­ing culi­nary theatres – a char­cu­terie and cheese room, wood-fired oven and an open­grill kitchen, has re­cently un­veiled its new Sun­day cham­pagne brunch of­fer­ing a tan­ta­lis­ing feast of brunch clas­sics, pre­mium seafood, fresh bakes and sweet. Din­ers can start off with a se­lec­tion of cured meats and cheeses paired fine wines, bubbles or fresh juices, be­fore mak­ing their way to the seafood cor­ner, where they can feast on fresh ocean catch like Bos­ton lob­sters, freshly-shucked oys­ters, poached live prawns and Alaskan king crabs. The buf­fet line also of­fers two freshly fired se­lec­tions from the carv­ing sta­tion with spe­cials such as the slow baked Nor­we­gian salmon fil­let.

Sig­na­ture seafood and meats items such as the char­grilled iberico pork loin, chicken dux­elle roulade, baked cod fish with fen­nel con­fit and saf­fron sauce, con­fit duck leg with mashed potato, and Bos­ton lob­ster risotto with diced as­para­gus, are also avail­able upon re­quest. These dishes are pre­pare a la minute, and are served in smaller por­tions.

Desserts, too, are equally im­pres­sive. Some of our favourites from the ex­ten­sive dessert sta­tion in­clude the choco­late hazel­nut mousse with hazel­nut feuil­letine, mixed berries cheese cake, baked pis­ta­chio cherry crum­ble, cherry bread and but­ter pud­ding, and the crispy ba­nana strudel.
