White Rice

White rice is milled rice, which means its nu­tri­ent-rich germ and bran are re­moved. On the plus side, this process ex­tends the shelf-life of the grain, but it also re­moves much of its vi­ta­mins and min­er­als. Make sure to look for en­riched white rice or con­verted rice if you don't want to make the switch to brown rice or wild rice.
