There are not many places in Sin­ga­pore where you’d find a clas­sic Eggs Bene­dict (S$18) and Udang Masak Le­mak (S$20) like you would at Baba Chews Bar and Eatery. Sit­u­ated on the ground floor of the for­mer Joo Chiat Po­lice Sta­tion turned Per­anakan-themed Ho­tel Indigo, the restau­rant fol­lows suit in dé­cor – tiles cov­ered in strik­ing flo­ral mo­tifs cover the floor, a pat­tern re­flected in the metal plates on the ceil­ing, while black ac­cents on white walls and retro plush chairs evoke the glam­orous feel of the past.

The multi-faceted head chef Alvin Leong leads the kitchen as it caters to dif­fer­ent menus through­out the day. For break­fast or brunch on the week­ends (from 10.30am to 3pm), ex­pect safe va­ri­eties of egg dishes, pan­cakes and the like. Leong’s All-day Din­ing op­tions are more com­pelling: a smat­ter­ing of South­east Asian and Western flavours in­clud­ing sig­na­ture cre­ations by celebrity chefs Sam Leong and Ian Kit­tichai, the re­sult of the In­ter­con­ti­nen­tal Ho­tels Group (IHG) Culi­nary Am­bas­sador pro­gramme. Sea­soned food­ies should head straight for the din­ner menu, a list of mouth-wa­ter­ing Per­anakan of­fer­ings that show­case a plethora of flavours – spiced, creamed and fer­mented – the cui­sine is famed for.
