This golden grain was one of the first plants to be do­mes­ti­cated. It was planted by pre­his­toric in­dige­nous peo­ple in the Amer­i­cas and it re­mains to be a sta­ple crop through­out the globe. Mex­i­cans use it in tor­tillas, atole and tamales; Amer­i­cans use it in corn bread and corn dogs; and count­less cuisines utilise corn­starch, high fruc­tose corn syrup, and corn oil.
