With views of the city sky­line and sur­rounded by ro­man­tic art deco and colo­nial in­te­ri­ors lend a touch of nos­tal­gia, a din­ner at the Fuller­ton Water­boat House is a meal to re­mem­ber. This Valen­tine’s Day, treat your­self and your loved one with a de­light­ful Tu Es (Be­cause You Are) menu (S$85) with a wine pair­ing op­tion at S$65 per per­son, and im­merse in op­u­lent won­der. Set the mood for an en­thralling even­ing with a cock­tail at The Rooftop Bar while tak­ing in a laser show at the Ma­rina Bay. Back in the din­ing room, start the din­ner with a Chef Sur­prise, fol­lowed by Mon Tré­sor (My Treasure) of a home-cured 12hour sous vide salmon served with de­con­structed gua­camole and freeze-dried pur­ple pota­toes. Next a creamy brie with pro­sciutto, seared and topped with Roma to­mato jam is just like its name­sake – Nul Autre (No Other). On to the mains, you might find your­self pressed for choice, with the L’amour De Ma Vie – a 300-day Grain Fed Prime Rib­eye served with yam cre­meux, white as­para­gus and rose­mary – and the Char­mante – a sous vide aburi maguro dipped in sesame seeds, lightly pan-fried and driz­zled with shoyu, served with but­tery vegetable and or­ange and young gin­ger cous­cous. Din­ner wraps with the lus­cious choco­late ganache with choco­late glace called Mon Cheri, served with caramelised banana slices, liq­uid pas­sion­fruit and candied gin­ger.
