Made from dried co­conut meat, co­conut flour is a great for bak­ing cakes, muffins and breads. Nat­u­rally gluten-free, grain­free and nut-free, co­conut flour, which is also high in fiber and low in car­bo­hy­drates, is ideal for celi­acs and di­a­bet­ics, as it as­sists in creat­ing a healthy blood sugar level, thanks to its low glycemic load, thus wouldn’t cause a spike in blood sugar lev­els. Other ben­e­fits of co­conut flour in­clude pro­motes healthy di­ges­tion, and aids in heart health as stud­ies have shown that co­conut flour con­tains high lev­els of both sol­u­ble and in­sol­u­ble di­etary fiber, which can help lower “bad” LDL choles­terol lev­els and serum triglyc­erides. How­ever, do note that co­conut flour is very ab­sorbent, thus it is im­por­tant to in­crease the num­ber of eggs in your recipes.
