Buckwheat Flour

Food and Travel (Singapore) - - Cook's Basics -

Milled from buckwheat berries, this flour is a nutritional gem that is rich in protein, antioxidants, dietary fiber, vitamins and minerals. Best of all, it is gluten-free and great for those who suffer from celiac disease. Buckwheat flour is most commonly used in Asian cooking, for making soba noodles. You can also add this rich, nutty flour to pancakes, blinis, bread and muffins. It is also great as a thickener for soups and stews. Store buckwheat flour in an airtight container in the refrigerator and it should stay fresh for a few months.
