Mil­let Flour

Most com­monly used in Asian and African cook­ing, mil­let flour, which has a dis­tinc­tively sweet and nut-like flavour, is well loved for its ex­cel­lent nu­tri­tional pro­file – it is not only high in fiber and pro­tein, but it is also very rich in nu­tri­ents. To avoid a crumbly tex­ture, bak­ing with mil­let flour usu­ally re­quires the ad­di­tion of xan­than or guar gum. To store, keep mil­let flour in an air­tight con­tainer in the re­frig­er­a­tor or freezer. Mil­let flour is best used for mak­ing flat breads, breads, pizza and other items con­tain­ing yeast.
